1.5 lbs ground beef (80/20 recommended)
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 medium yellow onion, finely chopped
8 oz cremini mushrooms, sliced
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Dijon mustard
1 teaspoon dried thyme
Instructions
In a bowl, gently combine the ground beef, breadcrumbs, milk, egg, salt, pepper, and Worcestershire sauce. Do not overmix.
Form the mixture into 4 equal oval-shaped patties, about 3/4 inch thick.
Heat the olive oil in a large skillet over medium heat. Brown the beef patties for 3 to 4 minutes per side. Remove the patties from the skillet and set them aside.
Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 7 minutes.
Sprinkle the flour over the onions and mushrooms. Stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the beef broth until the mixture is smooth. Bring the gravy to a simmer, stirring until it thickens slightly.
Stir in the Dijon mustard and dried thyme. Taste the gravy and add more salt and pepper if needed.
Return the beef patties to the skillet. Reduce the heat to low, cover, and let the patties simmer in the gravy for 10 to 15 minutes, or until cooked through and juicy.
Serve your Salisbury steak immediately, spooning plenty of the rich mushroom gravy over the top. This pairs well with mashed potatoes.
Notes
For extra flavor in your beef patties, add 1/2 teaspoon of garlic powder to the meat mixture.
If you prefer an onion gravy over mushroom gravy, skip the mushrooms and use 1 cup of finely chopped onions, cooking them until deeply caramelized before adding the flour.
You can make these patties ahead of time and store them in the refrigerator for up to one day before cooking.
