Make bite-size pizza muffins packed with classic pizza flavor, perfect for snacks, parties, or packed lunches.

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup pizza sauce

Instructions

  1. Preheat your oven to 375 degrees F. Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the mozzarella cheese and pepperoni slices.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Place about 1 teaspoon of pizza sauce on top of the batter in each cup.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • These freeze well for quick lunch additions. Cool completely before freezing in an airtight container.
  • You can substitute other pizza toppings like cooked sausage or chopped bell peppers.
  • For a richer flavor, use whole milk instead of regular milk.
