1 cup (2 sticks) unsalted butter, softened
1 teaspoon vanilla extract
1 pound (about 4 cups) powdered sugar, sifted
1 cup creamy peanut butter (do not use natural style)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
In a large bowl, beat the softened butter and vanilla extract together with an electric mixer until smooth.
Gradually add the sifted powdered sugar to the butter mixture, beating on low speed until combined, then increase speed to medium and beat until fluffy.
Add the creamy peanut butter and beat on medium speed until the mixture is completely smooth and uniform in color. Scrape down the sides of the bowl as needed.
Press the fudge mixture evenly into the prepared baking pan. Use a spatula or the back of a spoon to smooth the top.
Refrigerate the fudge for at least 2 hours, or until firm.
Lift the fudge out of the pan using the parchment paper overhang. Cut into 1-inch squares before serving.
Notes
For the best creamy texture, use commercial creamy peanut butter that does not separate.
If you prefer a thicker fudge, use a 9×9 inch pan instead of an 8×8 inch pan.
You can top the fudge with a light sprinkle of flaky sea salt before chilling for added flavor contrast.
