Make this sweet and savory skillet corn side dish quickly. It features rich butter, honey, and cream for a smooth texture, perfect for weeknight dinners or holiday meals.

  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1/2 cup heavy cream
  • 4 cups fresh or frozen sweet corn kernels
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: Fresh thyme or cracked pepper for garnish

Instructions

  1. Place the butter in a large skillet over medium heat. Let the butter melt completely.
  2. Add the honey to the melted butter and stir until combined. Cook for 30 seconds until the mixture is fragrant.
  3. Pour in the heavy cream and bring the mixture to a gentle simmer, stirring constantly.
  4. Add the corn kernels to the skillet. Stir to coat the corn evenly with the honey butter mixture.
  5. Continue to cook, stirring occasionally, for 5 to 7 minutes, or until the corn is tender and the sauce has thickened slightly.
  6. Stir in the salt and pepper. Taste and adjust seasoning if needed.
  7. Remove from heat. Garnish with fresh thyme or cracked pepper before serving hot.

Notes

  • If you use frozen corn, do not thaw it before adding it to the skillet.
  • For a richer flavor, use fresh sweet corn when it is in season.
