1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
3 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)
Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)
Instructions
In a medium bowl, whisk together the honey, soy sauce, rice vinegar, ginger, minced garlic, sesame oil, and red pepper flakes to create the marinade.
Place the cubed chicken into a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting and serving.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours due to the acid content.
Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece. Discard the marinade that touched the raw chicken.
Place the skewers on the hot grill. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks.
During the last few minutes of cooking, brush the skewers with the reserved marinade for extra glaze and flavor.
Remove the skewers from the grill and let them rest for 5 minutes before serving. Serve with the remaining reserved marinade as a dipping sauce.
Notes
For a Garlic Parmesan variation, omit the ginger and red pepper flakes. After grilling, brush the cooked skewers with melted butter mixed with 1/4 cup grated Parmesan cheese and 1 teaspoon garlic powder.
You can bake these skewers at 400°F for 15-20 minutes, turning halfway, or air fry at 375°F for 10-12 minutes.
Cut the chicken into uniform pieces to ensure even cooking time.
