  • 3 pounds Russet potatoes, peeled and cubed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 8 ounces cream cheese, cut into cubes
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 6 slices bacon, cooked and crumbled (for topping)
  • Green onions, sliced (for topping)

Instructions

  1. Place the cubed potatoes and chopped onion into the basin of your slow cooker.
  2. Pour the chicken broth over the potatoes and onions.
  3. Add the cream of chicken soup, cream of celery soup, salt, pepper, and garlic powder to the slow cooker. Stir gently to combine the ingredients.
  4. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the potatoes are tender.
  5. About 30 minutes before serving, add the cubed cream cheese to the soup. Stir occasionally until the cream cheese melts completely into the soup.
  6. Stir in the milk until the soup reaches your desired consistency.
  7. If you prefer a thicker soup, you can mash some of the potatoes against the side of the slow cooker.
  8. Stir in the shredded cheddar cheese until it is fully melted and smooth.
  9. Serve the creamy crockpot potato soup hot, topped with crumbled bacon and sliced green onions.

Notes

  • For a shortcut, you can substitute 30 ounces of frozen shredded hash browns for the fresh potatoes. Adjust cooking time as needed until potatoes are soft.
  • If you want a richer flavor, use half-and-half instead of milk when thinning the soup.
