Prepare this easy, one-pan cheesy rice recipe for a comforting side dish ready in under 30 minutes. It features a creamy texture using cheddar and Parmesan cheese, perfect for weeknight dinners.

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon cream cheese (optional, for extra creaminess)

Instructions

  1. Melt the butter in a large skillet or pot over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the uncooked rice, coating it in the butter mixture. Cook for 1 minute.
  4. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the skillet, and simmer for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  6. Remove the skillet from the heat. Stir in the milk, cheddar cheese, Parmesan cheese, and cream cheese (if using).
  7. Stir gently until all the cheese is melted and the rice is creamy and well combined.
  8. Serve immediately as a simple side dish or main meal.

Notes

  • For a richer flavor, substitute half the chicken broth with whole milk.
  • You can add 1 cup of frozen broccoli florets during the last 5 minutes of simmering for added vegetables.
  • Shred your own cheese for the best melting quality. Pre-shredded cheese contains anti-caking agents that can affect creaminess.
