This rich and creamy corn dip recipe is a crowd-pleaser, perfect for parties and game day gatherings. It combines sweet corn with cream cheese and sharp cheddar, baked until bubbly and golden.

  • 1 (15 ounce) can sweet corn, drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, drained
  • 1 (4 ounce) can diced green chilies, drained
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese, plus 1/2 cup for topping
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped green onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Tortilla chips or crackers, for serving

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until the base is smooth.
  3. Stir in the drained sweet corn, drained Rotel, and drained green chilies.
  4. Add the 1 cup of cheddar cheese, Parmesan cheese, green onion, cilantro, garlic powder, onion powder, and black pepper to the mixture. Stir everything together until all ingredients are evenly incorporated.
  5. Spread the corn dip mixture into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the dip.
  7. Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese topping is melted and lightly golden brown.
  8. Let the dip cool for 5 minutes before serving warm with your favorite tortilla chips or crackers.

Notes

  • For a spicy kick, add 1/2 cup of diced pickled jalapenos to the mix.
  • You can prepare this dip mixture a day ahead and store it covered in the refrigerator. Add 5 minutes to the baking time if baking cold.
  • If you prefer a crockpot corn dip, combine all ingredients (reserving the top cheese layer), place in a small slow cooker, and cook on low for 2 hours or high for 1 hour, topping with cheese for the last 15 minutes.
