Ingredients
Scale
3 cups cooked chicken, shredded or diced (rotisserie chicken works well)
1/2 cup celery, finely chopped
1/3 cup mayonnaise
1 tablespoon sweet pickle relish (optional)
1 teaspoon Dijon mustard
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Place the shredded or diced cooked chicken in a medium mixing bowl.
Add the finely chopped celery, mayonnaise, sweet pickle relish (if using), Dijon mustard, onion powder, salt, and pepper to the bowl.
Use a spoon or spatula to mix all ingredients together until the chicken is evenly coated and the salad is creamy.
Taste the chicken salad and adjust salt or mustard as needed for your preference.
Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
Serve the best chicken salad on bread for a sandwich, with crackers, or over lettuce leaves.
Notes
For a quicker prep, use pre-cooked rotisserie chicken. This is a great rotisserie chicken salad hack.
If you prefer a tangier flavor, reduce the sweet pickle relish and add a splash of fresh lemon juice.
This recipe is excellent for meal prep; it keeps well in the refrigerator for up to four days.
To make this a high protein lunch, serve it inside hollowed-out bell peppers instead of bread.
