Instructions
Place the chopped dark chocolate in a heatproof bowl set over a saucepan of simmering water. Stir until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.
In a separate bowl, beat the egg yolks with half of the sugar until the mixture is pale yellow and thick. Gently whisk the slightly cooled melted chocolate into the egg yolk mixture until fully combined.
In a clean, dry bowl, beat the heavy whipping cream and vanilla extract until soft peaks form. Set aside.

Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined.
Carefully fold in the beaten egg whites in two additions, working gently to keep the mixture light and airy. Stop folding just when no white streaks remain.
Spoon the chocolate mousse into individual serving dishes or small glasses.
Cover the dishes and chill in the refrigerator for at least 4 hours, or until firm.
