  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • For the Rice:
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk or half-and-half

Instructions

  1. Cook the Rice: Combine rice, 2 cups chicken broth, and 1 tablespoon butter in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed.
  2. Prepare the Chicken: Season the chicken pieces lightly with salt and pepper. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Make the Scampi Sauce: Reduce heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Pour in the white wine (or broth) and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  4. Stir in the heavy cream, lemon juice, and the first 1/4 cup of Parmesan cheese. Simmer gently until the sauce thickens slightly, about 3 minutes. Season with salt and pepper.
  5. Finish the Scampi: Return the cooked chicken to the skillet and toss to coat in the sauce. Stir in the fresh parsley. Keep warm on low heat.
  6. Finish the Rice: While the chicken simmers, prepare the rice seasoning. In a small bowl, mix the cooked rice with the remaining 1 tablespoon butter, 2 minced garlic cloves, 1/2 cup Parmesan cheese, and milk. Stir until creamy.
  7. Serve immediately: Spoon the Garlic Parmesan Rice onto plates and top with the Chicken Scampi and extra grated Parmesan cheese.

Notes

  • For a shrimp scampi style chicken, substitute shrimp for the chicken pieces and reduce the cooking time for the protein to about 3 minutes.
  • If you prefer a richer sauce, substitute chicken broth for the white wine.
  • You can add a pinch of red pepper flakes when sautéing the garlic for a little heat.
