  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup toasted slivered almonds
  • 2 tablespoons sesame seeds, toasted
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Prepare the vegetables: Place the shredded green and purple cabbage, carrots, green onions, and cilantro into a large bowl.
  2. Make the dressing: In a small jar with a tight-fitting lid, combine the rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic. Shake well until the dressing emulsifies.
  3. Dress the salad: Pour about three-quarters of the dressing over the cabbage mixture. Toss everything together until the vegetables are lightly coated. Add more dressing as needed to reach your preferred level of coating.
  4. Finish and serve: Gently fold in the toasted slivered almonds and sesame seeds. Serve immediately for maximum crunch, or chill for 15 minutes to allow the flavors to meld.
