  • 1 (8 ounce) package cream cheese, softened
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, drained
  • 1 cup sour cream
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 packet (1 ounce) taco seasoning mix
  • Optional: 1/2 cup canned corn, drained

Instructions

  1. In a medium bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a sturdy spoon to mix until the base is smooth and fully combined.
  2. Add the entire packet of taco seasoning mix to the cream cheese mixture. Stir until the seasoning is evenly distributed throughout the base.
  3. Gently fold in the drained Rotel tomatoes and green chilies. If you are using corn, add it now. Mix just enough to incorporate the ingredients without breaking down the tomatoes too much.
  4. Stir in the shredded cheese until it is evenly mixed into the dip.
  5. Transfer the dip to a serving bowl. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve your easy party dip cold with tortilla chips, crackers, or fresh vegetables.

Notes

  • For a thicker dip, use only half the amount of sour cream listed.
  • Drain the Rotel very well; excess liquid will make the dip watery.
  • This dip tastes best when made ahead of time, allowing the taco seasoning flavors to fully develop.
