Make this better than takeout Pepper Steak Stir Fry in 30 minutes. You get tender steak strips, crisp bell peppers, and a savory Asian sauce for a quick family dinner.

  • 1.5 lbs flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce (for marinade)
  • 1 teaspoon cornstarch (for marinade)
  • 1 tablespoon vegetable oil (for searing)
  • 1 large green bell pepper, cut into strips
  • 1 large red bell pepper, cut into strips
  • 1 medium yellow onion, cut into wedges
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup low sodium beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch (for sauce thickening)
  • 2 tablespoons water (for sauce thickening)
  • Cooked white rice, for serving

Instructions

  1. In a bowl, toss the sliced flank steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Let it sit for 10 minutes. This helps you cook tender steak strips.
  2. In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, oyster sauce, brown sugar, and 1 teaspoon cornstarch. Set the savory beef and vegetable dish sauce aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the marinated steak in a single layer, being careful not to overcrowd the pan. Sear the beef for 1-2 minutes per side until browned. Remove the steak and set it aside.
  4. Add the bell pepper strips and onion wedges to the same skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  5. Add the minced garlic and grated ginger to the skillet. Cook for 30 seconds until fragrant.
  6. Return the seared steak to the skillet. Pour the prepared sauce mixture over the steak and vegetables.
  7. Bring the sauce to a simmer, stirring constantly until it thickens, about 1 minute. Stir in the sesame oil.
  8. Remove the skillet from the heat immediately. Serve your flavorful pepper steak sauce over hot white rice for a fast homemade dinner.

Notes

  • For the best results when cooking tender steak strips, make sure your wok or skillet is very hot before adding the beef.
  • If you prefer a Crock Pot Pepper Steak meal, combine all ingredients except the cornstarch slurry and cook on low for 6-8 hours. Thicken the sauce at the end with a slurry made from 1 tablespoon cornstarch mixed with 2 tablespoons water.
  • This recipe is excellent for simple steak meal prep; store the steak and vegetables separately from the rice.
