1 pound ground beef
1 medium onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can red enchilada sauce
1 cup water
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
2 cups shredded cheddar cheese, divided
1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos)
1 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
Stir the cream of chicken soup, enchilada sauce, water, chili powder, cumin, and garlic powder into the skillet with the beef mixture. Cook until heated through, about 5 minutes.
Remove the skillet from the heat. Stir in 1 1/2 cups of the cheddar cheese until melted and combined.
Spread half of the meat mixture into the prepared baking dish.
Crush the Doritos lightly by hand or in a bag. Sprinkle half of the crushed chips over the meat layer.
Top the chips with the remaining meat mixture.
Sprinkle the remaining 1/2 cup of cheddar cheese and the Monterey Jack cheese over the top layer.
Bake for 20 minutes.
Remove the casserole from the oven and sprinkle the remaining crushed Doritos over the top.
Return to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and bubbly and the topping is slightly golden.
Let the casserole rest for 5 minutes before serving.
Notes
To keep the Doritos topping crunchy, add them only for the last few minutes of baking, as directed in the instructions.
You can substitute ground turkey for ground beef if you prefer a lighter meal.
For a spicier flavor, add a dash of hot sauce to the meat mixture.
