Ingredients
Scale
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup Dijon mustard
1 tablespoon whole grain mustard
1 teaspoon dried thyme
Salt and black pepper to taste
1 clove garlic, minced
Instructions
Season the chicken breasts on both sides with salt and pepper.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken to the hot skillet and cook for 5 to 7 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside on a plate.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
Whisk in the Dijon mustard, whole grain mustard, and dried thyme. Cook for 1 minute, stirring constantly.
Pour in the heavy cream and bring the sauce to a gentle simmer. Cook until the sauce thickens slightly, about 3 to 4 minutes. Taste the sauce and adjust salt and pepper if needed.
Return the cooked chicken breasts to the skillet. Spoon the creamy Dijon sauce over the chicken.
Heat through for 1 to 2 minutes. Serve immediately over mashed potatoes or rice.
Notes
For a slightly sweeter flavor, you can substitute 1 tablespoon of honey for 1 tablespoon of the heavy cream.
If you prefer using chicken thighs, adjust the cooking time as needed until they reach a safe internal temperature.
This sauce pairs well with roasted vegetables or steamed green beans for a low carb chicken dinner.
