  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 clove garlic, minced

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the hot skillet and cook for 5 to 7 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside on a plate.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
  6. Whisk in the Dijon mustard, whole grain mustard, and dried thyme. Cook for 1 minute, stirring constantly.
  7. Pour in the heavy cream and bring the sauce to a gentle simmer. Cook until the sauce thickens slightly, about 3 to 4 minutes. Taste the sauce and adjust salt and pepper if needed.
  8. Return the cooked chicken breasts to the skillet. Spoon the creamy Dijon sauce over the chicken.
  9. Heat through for 1 to 2 minutes. Serve immediately over mashed potatoes or rice.
