Make a quick, satisfying breakfast sandwich using flaky croissants. This recipe focuses on simple assembly for a hearty morning meal.

  • 2 large croissants
  • 4 slices bacon
  • 2 large eggs
  • 2 slices cheddar cheese
  • 1 teaspoon butter

Instructions

  1. Cook the bacon in a skillet until crisp. Remove the bacon and set it aside, keeping the rendered fat in the pan.
  2. Wipe out excess fat if necessary, then melt the butter in the skillet over medium heat.
  3. Crack the eggs into the skillet and cook them to your preference (sunny-side up or scrambled).
  4. Slice the croissants in half horizontally. Lightly toast the cut sides of the croissants in a toaster oven or on a dry skillet until just warm and slightly crisp.
  5. Place one slice of cheese on the bottom half of each croissant.
  6. Layer the cooked bacon and then the egg on top of the cheese.
  7. Place the top half of the croissant on the sandwich. Serve immediately for the best texture.

  • For a make ahead breakfast sandwich, cook the bacon and eggs ahead of time and store them separately. Reheat them before assembling.
