1 (25 ounce) bag frozen cheese ravioli
1 (24 ounce) jar quality marinara sauce
1 pound ground beef or Italian sausage, cooked and drained
1 (15 ounce) container ricotta cheese
1 large egg
1/2 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1 (8 ounce) package shredded mozzarella cheese
1 cup shredded mozzarella cheese (for topping)
Instructions
In a medium bowl, mix the ricotta cheese, egg, 1/2 cup Parmesan cheese, Italian seasoning, and garlic powder until combined. Set aside.
Lightly coat the bottom of a 5-quart or 6-quart slow cooker with cooking spray or a small amount of sauce.
Create the first layer by spreading about 1 cup of marinara sauce over the bottom of the slow cooker.
Arrange half of the frozen ravioli in a single layer over the sauce. If using frozen ravioli, do not thaw them first.
Spread half of the ricotta mixture evenly over the ravioli layer.
Sprinkle half of the cooked ground meat (if using) over the ricotta.
Spoon about 1 cup of marinara sauce over the meat layer.
Sprinkle 1/2 cup of the shredded mozzarella cheese over the sauce.
Repeat the layers: remaining ravioli, remaining ricotta mixture, remaining meat, remaining sauce, and the remaining 1/2 cup of mozzarella cheese.
Cover the slow cooker and cook on LOW for 3 to 4 hours or on HIGH for 1.5 to 2 hours, until the ravioli is tender.
During the last 15 minutes of cooking, sprinkle the remaining 1 cup of mozzarella cheese and extra Parmesan cheese over the top. Cover and let it melt.
Carefully remove the insert from the slow cooker. Let the lasagna rest for 10 minutes before serving. Serve warm with a side salad for a complete family-friendly slow cooker dinner.
Notes
You can substitute ground turkey or omit the meat entirely for a vegetarian option.
If your sauce seems too thick, add 1/4 cup of water or broth to the bottom layer to prevent scorching.
This recipe works well for meal prep; leftovers reheat nicely in the microwave.
