1 large egg, beaten
1 cup Panko breadcrumbs

1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons Sriracha (adjust to your spice preference)
1 tablespoon honey or brown sugar
1 teaspoon rice vinegar

Instructions
Prepare the chicken coating: In one shallow dish, combine the flour, salt, pepper, and garlic powder. In a second dish, place the beaten egg. In a third dish, place the Panko breadcrumbs.
Dredge the chicken pieces first in the flour mixture, shaking off excess. Dip the floured chicken into the egg, letting excess drip off. Finally, press the chicken firmly into the Panko breadcrumbs to coat completely.
Cook the chicken: For pan-frying, heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on a paper towel-lined plate. For the air fryer, spray the coated chicken with cooking spray and cook at 400°F (200°C) for 10-12 minutes, flipping halfway, until crispy.
Make the Bang Bang Sauce: While the chicken cooks, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey (or brown sugar), rice vinegar, and sesame oil in a medium bowl until smooth and creamy.
Toss the chicken: Place the hot, crispy chicken pieces in a large bowl. Pour the prepared Bang Bang Sauce over the chicken and gently toss until every piece is evenly coated.
Serve immediately over rice or as crispy chicken bites with vegetables for a complete, flavorful dinner.
Notes
To achieve maximum crispiness when pan-frying, do not overcrowd the skillet; cook the chicken in small batches.
If you prefer a milder sauce, start with only 1 tablespoon of Sriracha and taste before adding more.
