4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
2 tablespoons butter
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Season the chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until the garlic is fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for about 2 minutes.
Stir in the heavy cream and bring the sauce to a gentle simmer. Cook for 3 to 4 minutes, stirring occasionally, until the sauce begins to thicken.
Stir in the grated Parmesan cheese until the sauce is smooth. Taste the sauce and add more salt or pepper if needed.
Add the fresh spinach to the sauce. Stir gently until the spinach wilts down, which takes about 1 to 2 minutes.
Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the chicken.
Serve immediately over pasta, rice, or with crusty bread.
Notes
For a richer flavor, use dry white wine instead of half of the chicken broth. Let the wine cook down for 2 minutes before adding the rest of the broth.
If you want a thicker sauce, let the cream simmer uncovered for an extra 3 minutes before adding the Parmesan cheese.
