Make this simple, comforting pasta dish featuring a rich tomato sauce blended with creamy Boursin cheese for a quick weeknight dinner.

  • 1 pound pasta (penne or rotini work well)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (5.2 ounce) container Boursin Garlic & Fine Herbs cheese
  • 1/2 cup reserved pasta water
  • Fresh basil, for garnish (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta and set aside.
  2. While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Pour in the crushed tomatoes. Stir in the dried oregano, salt, and pepper. Bring the sauce to a gentle simmer and cook for 5 minutes, allowing the flavors to combine.
  5. Reduce the heat to low. Add the entire container of Boursin cheese to the tomato sauce. Stir continuously until the cheese has completely melted and the sauce is smooth and creamy.
  6. Add about 1/2 cup of the reserved pasta water to the sauce. Stir well; this helps the sauce cling to the pasta. If the sauce seems too thick, add a little more pasta water until you reach your desired consistency.
  7. Add the drained pasta to the skillet with the sauce. Toss everything together until the pasta is fully coated.
  8. Serve immediately, garnished with fresh basil if you wish.

Notes

  • For an extra layer of flavor, you can use sun-dried tomatoes in oil instead of fresh onion. Drain them and chop them finely before sautéing.
  • This recipe is a great base; feel free to add cooked chicken or spinach during the final mixing stage.
  • If you do not have Boursin Garlic & Fine Herbs, you can substitute it with plain cream cheese and add 1/2 teaspoon of dried mixed herbs.
