  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups peeled and diced potatoes (about 2 medium)

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese (optional, for cheeseburger flavor)
  • 1/2 cup shredded Monterey Jack cheese (optional)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the beef broth. Add the diced potatoes, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the potatoes are tender.
  4. In a small bowl, whisk the flour into the milk until smooth. Pour this mixture into the simmering soup, stirring constantly until the soup begins to thicken.
  5. Stir in the heavy cream. Continue to cook over low heat, stirring often, until the soup is heated through but not boiling.
  6. If using cheese, remove the pot from the heat. Stir in the cheddar and Monterey Jack cheese until melted and smooth.
  7. Serve hot with your favorite toppings.
