One-Pot Creamy Garlic Mushroom Pasta

Make this easy, rich, and creamy mushroom pasta in one pot for a comforting weeknight dinner ready in under 30 minutes. It features deep garlic and Parmesan flavor.

Ingredients

  • 1 pound pasta (fettuccine or penne work well)
  • 1 tablespoon olive oil
  • 1 pound cremini or button mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, plus more for seasoning
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 6 to 8 minutes.
  3. Reduce the heat to medium. Add the minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and bring the sauce back to a gentle simmer. Cook for 2 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  7. Add the cooked pasta and the fresh spinach (if using) to the skillet. Toss everything together until the pasta is coated and the spinach wilts, about 1 minute.
  8. Taste and add more salt or pepper if needed. Serve immediately topped with extra Parmesan cheese and fresh parsley.

Notes

  • For a richer flavor, substitute half of the vegetable broth with dry white wine and let it cook down before adding the cream.
  • If you want a heartier meal, you can sauté 4 slices of chopped bacon before adding the mushrooms.
  • This recipe is vegetarian, but adding cooked chicken or shrimp works well if you prefer meat.
