Make this restaurant style creamy chicken dish at home. This easy weeknight chicken dinner features pan seared chicken breasts smothered in a rich parmesan cream sauce.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, halved horizontally
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165 degrees F). Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook until the sauce slightly thickens, about 3 minutes.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. If using, add the sun-dried tomatoes.
  8. Add the fresh spinach to the sauce and cook until wilted, about 2 minutes. Taste the sauce and adjust salt and pepper as needed.
  9. Return the cooked chicken to the skillet. Spoon the rich parmesan cream sauce over the chicken.
  10. Serve immediately, garnished with extra Parmesan cheese. This pairs well with pasta or mashed potatoes.

Notes

  • For thicker sauce, simmer the cream mixture a little longer before adding the cheese.
  • You can use chicken thighs instead of breasts; adjust searing time accordingly.
  • If you want a tangier flavor, add 1 teaspoon of lemon juice at the end.
