  • 1 tablespoon unsalted butter
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese, cut into small pieces
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until soft, about 3 minutes.
  2. Add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic brown.
  3. Add the thoroughly drained spinach to the saucepan. Cook for 2 minutes, stirring to heat through.
  4. Pour in the heavy cream and add the cream cheese pieces. Stir constantly until the cream cheese has melted and the sauce is smooth.
  5. Stir in the Parmesan cheese, salt, pepper, and nutmeg. Continue to cook, stirring gently, until the sauce thickens slightly, about 3 to 5 minutes. Do not boil.
  6. Taste and adjust seasoning if needed. Serve immediately as a gourmet side dish for dinner.

  • For a low-carb keto creamed spinach variation, skip the Parmesan cheese and use only cream cheese and heavy cream for the base.
