  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped fresh or canned tomatoes (drained if canned)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. Prepare the vegetables: Chop the red onion, green bell pepper, red bell pepper, and tomatoes. If using, mince the jalapeño. Chop the fresh cilantro.
  2. Combine the main ingredients: In a large bowl, mix together the rinsed and drained black beans, black-eyed peas, corn, chopped onion, bell peppers, tomatoes, and cilantro.
  3. Make the zesty vinaigrette: In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, salt, black pepper, and minced jalapeño, if you are using it.
  4. Dress the caviar: Pour the vinaigrette over the bean and vegetable mixture. Gently toss everything together until all ingredients are evenly coated.
