1 jalapeño, seeded and minced (optional)
Instructions
Prepare the vegetables: Chop the red onion, green bell pepper, red bell pepper, and tomatoes. If using, mince the jalapeño. Chop the fresh cilantro.
Combine the main ingredients: In a large bowl, mix together the rinsed and drained black beans, black-eyed peas, corn, chopped onion, bell peppers, tomatoes, and cilantro.
