Make this creamy, cheesy cottage cheese queso dip in minutes. It is a high-protein alternative to traditional queso, perfect for a quick snack or party appetizer.

Ingredients

  • 1 cup low-fat cottage cheese
  • 4 ounces shredded sharp cheddar cheese
  • 1/4 cup Rotel (diced tomatoes and green chilies), drained
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Pinch of salt

Instructions

  1. Place the cottage cheese, shredded cheddar cheese, drained Rotel, chili powder, cumin, and salt into a high-speed blender or food processor.
  2. Blend the mixture until it is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. Transfer the blended mixture to a microwave-safe bowl.
  4. Microwave on high for 30 to 60 seconds, stirring halfway through, until the cheese is fully melted and the dip is hot.
  5. Serve immediately with tortilla chips, vegetable sticks, or as a topping for tacos and nachos.

Notes

  • For a thinner consistency, add one tablespoon of milk or water while blending.
