1 cup low-fat cottage cheese
4 ounces shredded sharp cheddar cheese
1/4 cup Rotel (diced tomatoes and green chilies), drained
1/2 teaspoon chili powder
1/4 teaspoon cumin
Pinch of salt
Instructions
Place the cottage cheese, shredded cheddar cheese, drained Rotel, chili powder, cumin, and salt into a high-speed blender or food processor.
Blend the mixture until it is completely smooth and creamy. Stop and scrape down the sides as needed.
Transfer the blended mixture to a microwave-safe bowl.
Microwave on high for 30 to 60 seconds, stirring halfway through, until the cheese is fully melted and the dip is hot.

Notes
For a thinner consistency, add one tablespoon of milk or water while blending.
