Make a fudgy, high-protein chocolate brownie in your microwave in under two minutes. This single-serve recipe uses cottage cheese for a moist texture and is a quick, guilt-free dessert fix.

Ingredients

Scale
  • 1/4 cup cottage cheese (full fat or low fat)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Combine the cottage cheese and egg in a microwave-safe mug or small bowl. Blend using an immersion blender or whisk vigorously until completely smooth. You must eliminate all curds for a smooth texture.
  2. Add the cocoa powder, sweetener, vanilla extract, and baking powder to the mixture. Stir until just combined.
  3. Fold in the chocolate chips, if using.
  4. Microwave on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage; start checking at 60 seconds. The center should look set but still slightly moist.
  5. Let the brownie cool in the mug for one minute before eating.

Notes

  • For the smoothest texture, use a high-speed blender or immersion blender to fully incorporate the cottage cheese and egg first.
  • If you prefer a richer chocolate flavor, add an extra half teaspoon of cocoa powder.
  • This recipe is naturally gluten free and low carb when using appropriate sweetener.
  • If the brownie seems dry after cooking, next time reduce the microwave time by 10 seconds.
