1 cup rolled oats
1/2 cup chocolate protein powder
1/2 cup natural peanut butter or almond butter
1/4 cup unsweetened cocoa powder
2 tablespoons maple syrup or honey
1 tablespoon chia seeds or flax seeds
1 teaspoon vanilla extract
2–4 tablespoons milk (dairy or non-dairy, as needed for consistency)
1/4 cup mini chocolate chips (optional, for extra fudginess)
2 tablespoons rainbow sprinkles (for topping)
Instructions
Combine the rolled oats, chocolate protein powder, cocoa powder, and chia seeds in a food processor. Pulse until the mixture resembles coarse flour.
Add the peanut butter, maple syrup, and vanilla extract to the food processor. Process until the mixture starts to come together into a thick dough.
If the dough is too dry to hold a shape, add milk one tablespoon at a time until the mixture is moist enough to roll. If you are using mini chocolate chips, pulse them in briefly at the end.
Roll the mixture into small, one-inch balls. You should get about 16 to 20 protein bites.
Place the rainbow sprinkles on a small plate. Roll each protein ball lightly in the sprinkles until coated on the top or sides.
Place the finished chocolate sprinkled protein snacks on a parchment-lined plate or tray.
Refrigerate the bites for at least 30 minutes to firm up before serving. Store leftovers in an airtight container in the refrigerator.
Notes
For a richer chocolate flavor, use dark cocoa powder.
If you do not have a food processor, mix the dry ingredients in a bowl, then thoroughly mix in the wet ingredients by hand.
These are excellent make ahead healthy snacks for quick energy.
