Ingredients
Scale
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
For the Cinnamon Swirl:
1/2 cup packed light brown sugar
2 tablespoons ground cinnamon
4 tablespoons unsalted butter, melted
For the Cream Cheese Glaze:
4 ounces cream cheese, softened
1/4 cup (1/2 stick) unsalted butter, softened
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
1–2 tablespoons milk
For Decoration (Hello Kitty Theme):
White frosting or royal icing
Black edible marker or black gel icing
Pink edible marker or pink gel icing
Instructions
Preheat your oven to 350°F (175°C). Grease and flour one 9-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
Prepare the cinnamon swirl: In a small bowl, mix the brown sugar and cinnamon together.
Spread half of the cake batter into the prepared pan. Drizzle with half of the melted butter, then sprinkle with half of the cinnamon-sugar mixture. Gently swirl with a knife.
Top with the remaining cake batter. Drizzle with the remaining melted butter and sprinkle with the remaining cinnamon-sugar mixture. Use a knife to gently swirl the top layer.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Prepare the glaze: Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until combined. Add vanilla and milk, one tablespoon at a time, until you reach a smooth, spreadable consistency.
Once the cake is completely cool, spread the cream cheese glaze evenly over the top.
Decorate for Hello Kitty: Use white frosting to create a smooth top layer if needed. Once the white base is set, use the black edible marker or gel icing to draw two small oval eyes and a small oval nose near the top center of the cake. Use pink gel icing to draw a small bow shape above one ear area (or use a small piece of pink fondant for a 3D bow).
Notes
For a cleaner swirl, you can mix the melted butter into the cinnamon-sugar mixture before sprinkling it over the batter layers.
If you want a taller cake, you can divide the batter into two 8-inch pans and layer them, adjusting the baking time slightly.
You can substitute store-bought cinnamon roll icing for the homemade glaze if you prefer a quicker finish.
