Ingredients
Scale
1 cup fresh cilantro, packed
1/2 cup Greek yogurt (or mayonnaise for richer flavor)
1/4 cup mayonnaise (optional, for extra creaminess)
1/4 cup fresh lime juice (about 2 limes)
2 cloves garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup water (or more, to thin)
1 small jalapeno, seeded (optional, for mild heat)
Instructions
Gather all your ingredients near your food processor or blender.
Place the fresh cilantro, Greek yogurt, mayonnaise (if using), lime juice, garlic, salt, pepper, and optional jalapeno into the blender jar.
Secure the lid and begin blending on low speed.
Slowly stream in the water while the blender is running until the sauce reaches your desired consistency. You want it pourable but thick enough to coat food.
Taste the sauce and add more salt or lime juice if needed.
Transfer the finished sauce to an airtight container. This homemade sauce is best used right away or chilled for up to three days.
Notes
For a vegan cilantro lime sauce, substitute the Greek yogurt with a plant-based yogurt or use all mayonnaise/avocado for creaminess.
This recipe makes a great marinade for chicken or fish; let meat sit in the sauce for at least 30 minutes before cooking.
If you want a brighter green color, add a small squeeze of lime juice right before serving, as oxidation can dull the color over time.
