  • 1 3/4 cups granulated sugar, plus 1 cup for rolling
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (optional, for double chocolate flavor)

Instructions

  1. In a large bowl, cream together the softened butter and 1 3/4 cups of granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, stir in the chocolate chips.
  5. Cover the dough and chill in the refrigerator for at least 2 hours, or preferably overnight. Chilling the dough helps create the best crackle effect.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Pour the remaining 1 cup of granulated sugar into a shallow dish.
  8. Scoop rounded tablespoons of chilled dough and roll them into balls. Roll each ball thoroughly in the plain granulated sugar.
