1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 cup fresh pineapple chunks
1/4 cup olive oil
2 tablespoons lime juice
1 tablespoon chipotle powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
10 wooden or metal skewers (if using wood, soak for 30 minutes)
For the Drizzle: 1/2 cup mayonnaise or Greek yogurt
2 tablespoons sriracha or hot sauce
1 tablespoon mango puree or finely minced fresh mango
1 tablespoon lime juice
1 teaspoon honey or maple syrup
Pinch of salt
Instructions
In a medium bowl, whisk together the olive oil, lime juice, chipotle powder, smoked paprika, cumin, salt, and pepper to create the marinade.
Add the cubed chicken to the marinade, toss to coat completely, and cover. Refrigerate for at least 30 minutes or up to 4 hours.
While the chicken marinates, prepare the drizzle. In a small bowl, combine the mayonnaise (or yogurt), sriracha, mango puree, lime juice, honey, and a pinch of salt. Mix well until smooth. Set aside.
Thread the marinated chicken and pineapple chunks alternately onto your prepared skewers. Aim for 4-5 pieces of chicken per skewer.
Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
Place the skewers on the hot grill. Cook for 10 to 14 minutes, turning every 3 to 4 minutes, until the chicken is cooked through and has nice grill marks.
Remove the skewers from the grill and arrange them on a serving platter.

Notes
For easy cleanup, line a baking sheet with foil if you choose to bake these skewers at 400°F for 18-20 minutes instead of grilling.
You can prepare the marinade and the drizzle up to one day ahead of time. Store them separately in the refrigerator.
If you prefer a sweeter sauce, increase the honey in the drizzle slightly.
