A comforting, one-dish oven meal featuring tender chicken breasts baked in a rich, low-carb cream sauce with fresh spinach and mushrooms.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 pound fresh white button mushrooms, sliced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Season the chicken breasts on both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned. Remove the chicken and set it aside.
  3. In the same skillet, add the sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the heavy whipping cream, chicken broth, and Italian seasoning. Bring the mixture to a gentle simmer, stirring constantly until the sauce thickens slightly.
  5. Add the fresh spinach to the sauce, stirring until it wilts completely.
  6. Pour half of the cream sauce mixture into the bottom of the prepared baking dish. Arrange the seared chicken breasts over the sauce layer.
  7. Pour the remaining sauce evenly over the chicken.
  8. Sprinkle the mozzarella cheese and Parmesan cheese over the top of the dish.
  9. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the top is bubbly and golden brown.
  10. Let the dish rest for 5 minutes before serving.

Notes

  • For an extra layer of flavor, you can add 1/4 teaspoon of onion powder to the cream sauce.
  • If you prefer a thicker sauce, reduce the chicken broth slightly or let the sauce simmer longer before adding the spinach.
  • This keto chicken spinach bake pairs well with a side of steamed broccoli or cauliflower rice.
