  • 2 carrots, peeled and diced

  • 2 cups chicken broth
  • 1 cup whole milk

  • 1 cup frozen corn
  • 2 refrigerated pie crusts (for a double crust)

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C). Place one pie crust into a 9-inch pie dish. Trim the edges if necessary.
  2. Melt the butter in a large saucepan over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the flour, salt, pepper, and thyme. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth and milk until the mixture thickens into a gravy. Bring the mixture to a simmer.
  5. Remove the saucepan from the heat. Stir in the cooked chicken, frozen peas, and frozen corn.
  6. Pour the creamy chicken filling into the pie crust lined dish.
  7. Place the second pie crust over the filling. Crimp the edges of the top and bottom crusts together to seal. Cut several slits in the top crust to allow steam to escape.
  8. Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let the chicken pot pie cool for at least 10 minutes before slicing and serving.
