Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1/2 cup chopped water chestnuts, drained
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions, divided
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • Optional: chopped peanuts for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is fully browned and no pink remains. Drain off any excess grease.
  3. Add the water chestnuts and mushrooms to the skillet. Cook for 3 to 4 minutes until the vegetables soften slightly.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and black pepper to create the lettuce wrap sauce.
  6. Pour the sauce mixture over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for 2 minutes, allowing the sauce to thicken slightly.
  7. Remove the skillet from the heat. Stir in half of the chopped green onions.
  8. Arrange the washed lettuce cups on a serving platter. Spoon the savory ground chicken filling into each lettuce cup.
  9. Garnish with the remaining green onions and optional chopped peanuts. Serve immediately.

Notes

  • For the best texture, use crisp lettuce like butter lettuce or iceberg lettuce cups. Make sure the leaves are dry before filling.
  • This recipe is naturally low carb and high protein, fitting well into healthy chicken lettuce wraps meal plans.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes with the sauce ingredients.
