Make this easy Chicken Caesar Pasta Salad for a satisfying meal or side dish. It combines tender chicken, pasta, crisp romaine, and a rich, creamy Caesar dressing. This recipe is great for weeknight dinners, meal prep, or summer cookouts.

  • 1 pound rotini or farfalle pasta
  • 2 cups cooked, shredded chicken breast
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup homemade or store-bought Caesar dressing (use extra for creaminess)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1/2 cup croutons for topping

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse briefly with cold water to stop cooking. Set aside.
  2. In a large bowl, toss the cooked pasta with olive oil, garlic powder, salt, and pepper. This prevents sticking.
  3. Add the shredded cooked chicken, chopped romaine lettuce, and grated Parmesan cheese to the bowl with the pasta.
  4. Pour the Caesar dressing over the salad ingredients.
  5. Toss everything gently until the pasta, chicken, and lettuce are evenly coated with the creamy dressing.
  6. If preparing ahead, cover and chill for at least 30 minutes to allow flavors to meld.
  7. Before serving, taste and adjust seasoning if needed. Top with croutons, if using.

Notes

  • For make ahead meals, keep the croutons separate and add them just before serving to maintain crunch.
  • You can substitute rotisserie chicken for pre-cooked chicken to make this recipe even quicker.
  • If you prefer a lighter salad, reduce the amount of Caesar dressing slightly.
