2 lbs Yukon Gold potatoes, thinly sliced
1 lb cooked chicken, shredded or diced
8 slices bacon, cooked and crumbled
1 (10.5 oz) can condensed cream of chicken soup
1 cup milk
1 cup shredded cheddar cheese, divided
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 cup crushed potato chips (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cream of chicken soup, milk, garlic powder, pepper, and salt. Stir until smooth.
Fold in the shredded chicken, crumbled bacon, and half of the shredded cheddar cheese into the soup mixture.
Arrange half of the sliced potatoes in a single layer in the bottom of the prepared baking dish.
Pour half of the chicken and bacon mixture evenly over the potatoes.
Layer the remaining potatoes over the mixture, then top with the rest of the chicken mixture.
Sprinkle the remaining half of the cheddar cheese over the top layer.
Bake for 50 to 60 minutes, or until the potatoes are tender when pierced with a fork and the top is golden brown.
If using, sprinkle the crushed potato chips over the top during the last 10 minutes of baking.
Let the chicken bacon potato bake rest for 5 minutes before serving.
Notes
You can use pre-cooked rotisserie chicken to save time on preparation.
For extra flavor, substitute the cream of chicken soup with cream of mushroom soup.
If you prefer softer potatoes, you can microwave the sliced potatoes for 5 minutes before assembling the bake.
