Make this light and airy dessert using cream cheese and cherry pie filling. It is a simple spoonable cheesecake that works well for potlucks.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 (21 ounce) can cherry pie filling
  • 1 cup crushed graham crackers

Instructions

  1. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth.
  2. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
  4. Fold in half of the cherry pie filling and half of the crushed graham crackers into the fluff mixture.
  5. Spoon half of the mixture into a serving dish. Top with half of the remaining cherry pie filling.
  6. Layer the remaining fluff mixture on top, followed by the remaining cherry pie filling.
  7. Sprinkle the remaining crushed graham crackers over the top layer.
  8. Cover the dish and chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a layered look, you can alternate layers of the fluff mixture and cherry filling in a clear glass dish.
  • You can use store-bought graham cracker crumbs to save time.
  • If you want a firmer texture, chill the dessert for 4 hours or overnight.
