Make the popular theme park favorite at home with this straightforward recipe for Cheeseburger Egg Rolls. This recipe delivers a savory ground beef and melted cheese filling wrapped in a crispy shell, perfect for an easy appetizer or snack.

Ingredients

Scale
  • 1 pound ground beef (80/20 recommended)
  • 1/2 cup finely chopped yellow onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 package (about 24 count) egg roll wrappers
  • Vegetable oil, for frying (or cooking spray for air frying)
  • For Dipping Sauce: 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 1 teaspoon pickle relish

Instructions

  1. In a large skillet over medium heat, cook the ground beef with the chopped onion until the beef is fully browned and the onion is soft. Drain off any excess grease completely.
  2. Stir the garlic powder, salt, and pepper into the cooked meat mixture. Remove the skillet from the heat and let the mixture cool for about 10 minutes.
  3. Once slightly cooled, stir in the shredded cheddar and Monterey Jack cheeses until evenly distributed throughout the meat.
  4. Place one egg roll wrapper on a clean, flat surface with a corner pointing toward you. Place about 2 tablespoons of the filling just below the center of the wrapper.
  5. Fold the bottom corner up over the filling. Fold the left and right corners inward over the filling. Moisten the top edge of the wrapper lightly with water using your finger. Roll the wrapper tightly away from you to seal the egg roll. Repeat with the remaining filling and wrappers.
  6. To make the dipping sauce, whisk together the mayonnaise, ketchup, mustard, and pickle relish in a small bowl. Set aside.
  7. To cook: Heat 1 inch of vegetable oil in a deep skillet to 350 degrees F. Carefully place 3-4 egg rolls into the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side until golden brown and crispy. Remove and place on a paper towel-lined plate to drain. (Alternatively, air fry at 375 degrees F for 8-10 minutes, flipping halfway, until golden.)
  8. Serve your hot Cheeseburger Egg Rolls immediately with the special dipping sauce.

Notes

  • For the best flavor replication of the theme park favorite, use a good quality, sharp cheddar cheese.
  • Make sure the meat filling is not hot when you assemble the rolls, or the wrappers may tear.
  • You can prepare the filling up to one day ahead and store it covered in the refrigerator.
