  • 1 large Granny Smith apple, diced
  • 1/2 cup walnuts, roughly chopped and toasted
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the celery by washing the stalks thoroughly and slicing them thinly across the grain. Place the sliced celery in a large bowl.
  2. Dice the apple into pieces similar in size to the celery slices. Add the apple to the bowl with the celery.
  3. Toast the walnuts in a dry skillet over medium heat for about 3 to 5 minutes, stirring often until fragrant. Let them cool slightly.
  4. In a separate small bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, salt, and pepper until smooth. This makes your light celery salad dressing.
  5. Pour the dressing over the celery and apple mixture. Gently toss everything together until the vegetables are evenly coated.
  6. Fold in the toasted walnuts.
  7. Cover the bowl and chill the celery salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
