3 lbs sweet potatoes, peeled and sliced into 1/2-inch rounds
1 cup packed brown sugar
1/2 cup water
1/4 cup unsalted butter, cut into pieces
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
Optional: 1 cup miniature marshmallows or 1/2 cup chopped pecans for topping
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Arrange the sliced sweet potatoes in a single layer in the prepared baking dish.
In a medium saucepan, combine the brown sugar, water, butter, cinnamon, and salt.
Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves completely. Bring the mixture to a gentle boil, then remove it from the heat.
Stir in the vanilla extract.
Carefully pour the hot brown sugar glaze evenly over the sweet potatoes in the baking dish.
Bake for 35 to 45 minutes, or until the sweet potatoes are tender when pierced with a fork and the glaze has thickened slightly. Baste the potatoes halfway through baking.
If using marshmallows or pecans, sprinkle them over the top during the last 5 minutes of baking, or until the marshmallows are golden brown and melted.
Remove from the oven and let stand for a few minutes before serving.

For a Southern sweet potato recipe feel, you can simmer the potatoes on the stovetop in the glaze until tender before transferring them to the oven for the final glaze setting.
