Make soft, chewy cookies fast using just a box of cake mix, eggs, and butter. This shortcut recipe is perfect for quick baking.

Ingredients

Scale
  • 1 box (15.25 oz) cake mix (any flavor)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the dry cake mix, eggs, and melted butter. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
  3. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
  4. Bake for 8 to 10 minutes, or until the edges are set. The centers may look slightly underdone.
  5. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • You can use any flavor of boxed cake mix for this recipe. Vanilla or yellow cake mix yields a classic sugar cookie flavor.
  • For softer cookies, use slightly less baking time. For chewier cookies, use butter instead of oil.
  • Add mix-ins like chocolate chips, sprinkles, or chopped nuts after the dough forms.
