Make these easy no-bake Buckeye Graham Crackers for a simple dessert that combines creamy peanut butter filling, crisp graham crackers, and a rich chocolate coating. This recipe delivers the flavor of classic buckeye candy in a satisfying bar form.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box (14.4 ounces) graham crackers
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, beat together the peanut butter, softened butter, powdered sugar, and vanilla extract until the mixture is smooth and creamy. This forms your peanut butter layer.
  3. Break the graham crackers in half to create smaller, manageable squares.
  4. Press half of the graham crackers into a single layer on the bottom of the prepared pan.
  5. Spread the entire peanut butter mixture evenly over the layer of graham crackers.
  6. Arrange the remaining graham crackers on top of the peanut butter layer. Gently press them down so they adhere to the filling.
  7. Place the pan in the freezer for 15 minutes to allow the peanut butter layer to firm up slightly.
  8. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth.
  9. Pour the melted chocolate over the top layer of graham crackers, spreading it quickly to cover the surface evenly.
  10. Return the pan to the refrigerator for at least 1 hour, or until the chocolate is fully set.
  11. Use the parchment paper overhang to lift the entire block from the pan. Cut into squares for serving.

Notes

  • For a cleaner cut, let the bars set completely in the refrigerator before slicing. Use a large, sharp knife.
  • If you prefer a darker chocolate flavor, substitute semi-sweet chocolate chips with dark chocolate chips for dipping.
  • Store these no bake peanut butter chocolate dessert bars in an airtight container in the refrigerator for up to one week.
