1 box (about 18.3 ounces) of your favorite brownie mix
2 large eggs
1/2 cup vegetable oil
1 cup semi-sweet chocolate chips (optional)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of brownie mix, the 2 eggs, and the vegetable oil. Mix with a spoon or electric mixer until just combined. Do not overmix.
If using, stir in the chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. You can lightly press the tops down if you prefer a flatter cookie.
Bake for 9 to 12 minutes. The edges should look set, but the center will still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a chewier cookie, slightly reduce the baking time. For a slightly cake-like texture, bake for the full 12 minutes.
You can add 1/2 cup of chopped walnuts or pecans to the dough for extra crunch.
To make these cookies extra fudgy, substitute the vegetable oil with melted butter.
