1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 (20 ounce) can pineapple chunks, drained (reserve 1/4 cup juice)
1/2 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 tablespoon cornstarch
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1 tablespoon vegetable oil
Optional: 1/4 cup chopped green onions for garnish
Instructions
In a small bowl, whisk together the reserved pineapple juice, brown sugar, soy sauce, apple cider vinegar, cornstarch, ginger, and garlic powder until the cornstarch is dissolved. This is your brown sugar glaze.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 5 to 7 minutes.
Pour the prepared brown sugar glaze mixture over the chicken in the skillet.
Bring the sauce to a simmer, stirring constantly. Allow it to cook for 1 to 2 minutes until the sauce thickens into a glaze.
Add the drained pineapple chunks to the skillet and toss gently to coat everything in the glaze. Cook for 1 minute until the pineapple is heated through.
Remove from heat. Garnish with green onions if desired. Serve immediately over rice.
Notes
For a spicier version, add 1/4 teaspoon of red pepper flakes to the glaze mixture.
You can use chicken thighs for a more tender result. Adjust cooking time slightly if using thicker pieces.
This dish pairs well with steamed white rice or brown rice and a side of steamed broccoli.
