A straightforward recipe for baking boneless, skinless chicken thighs to achieve maximum moisture and flavor, perfect for quick weeknight chicken meals.

Ingredients

Scale
  • 4 boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
  2. Pat the chicken thighs completely dry using paper towels. This helps the seasoning adhere better.
  3. In a small bowl, mix together the salt, pepper, garlic powder, paprika, and dried thyme.
  4. Rub the olive oil over all surfaces of the chicken thighs.
  5. Sprinkle the seasoning mixture evenly over both sides of the chicken thighs, pressing gently so it sticks.
  6. Place the seasoned chicken thighs in the prepared baking dish in a single layer.
  7. Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  8. Remove the chicken from the oven and let it rest for 5 minutes before serving. This helps keep the meat juicy.

Notes

  • For extra flavor, you can marinate the chicken for 30 minutes before baking.
  • If you prefer a slightly crispier exterior, place the thighs on a wire rack set inside the baking sheet.
  • This recipe works well for meal prep chicken thighs; simply store cooled, cooked thighs in an airtight container in the refrigerator for up to four days.
