  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 4 cloves garlic, minced

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, whisk together the lime juice, olive oil, cilantro, garlic, cumin, oregano, salt, and pepper to make the flavorful steak marinade.
  2. Place the skirt steak in a large, resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is fully coated.
  3. Seal the bag or cover the dish. Refrigerate for at least 2 hours, but no more than 6 hours, to achieve tender skirt steak results. Do not marinate longer, as the citrus can make the meat mushy.
  4. Remove the steak from the refrigerator 30 minutes before cooking to allow it to come closer to room temperature. Discard the remaining marinade.
  5. Preheat your grill to high heat (about 450 degrees F). Lightly oil the grates.
