  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons Sriracha (adjust to your spice preference)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Wooden or metal skewers (if using wood, soak them for 30 minutes)

Instructions

  1. Prepare the chicken: Place the cubed chicken in a bowl. Toss with olive oil, salt, pepper, and garlic powder. Thread the seasoned chicken pieces onto your prepared skewers, leaving a small space between each piece.
  2. Preheat your cooking method. For grilling, set the grill to medium-high heat (about 400°F). For baking, preheat your oven to 400°F (200°C). If using an air fryer, set it to 380°F (195°C).
  3. Cook the skewers. If grilling, place skewers on the oiled grates and cook for 4 to 5 minutes per side, turning until the chicken is cooked through (internal temperature reaches 165°F). If baking, place on a lined baking sheet and bake for 15 to 20 minutes, flipping halfway. If air frying, cook for 10 to 12 minutes, flipping halfway.
  4. Make the Bang Bang sauce: While the chicken cooks, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and sesame oil in a small bowl until smooth. This is your copycat Bang Bang sauce recipe.
  5. Glaze the chicken: Once the chicken is fully cooked, brush the Bang Bang sauce generously over all sides of the skewers.
  6. Return the glazed skewers to the heat source for 1 to 2 minutes, just long enough for the sauce to caramelize slightly without burning. Watch closely.
  7. Remove from heat and serve your spicy glazed chicken kebabs immediately.
