Make these flavorful grilled chicken skewers coated in a creamy, spicy, and sweet Bang Bang sauce. This recipe is simple for your next summer BBQ.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your spice preference)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes)

Instructions

  1. Prepare the chicken: Place the cubed chicken in a bowl. Toss with olive oil, salt, and pepper. Thread the chicken pieces onto the prepared skewers, leaving a small space between each piece.
  2. Make the Bang Bang sauce: In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder until smooth.
  3. Reserve half of the sauce for dipping or drizzling after grilling.
  4. Brush the chicken skewers lightly with half of the remaining sauce.
  5. Preheat your grill to medium-high heat (about 400°F). Clean and lightly oil the grates to prevent sticking.
  6. Grill the skewers for 10 to 12 minutes total, turning every 3 to 4 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F.
  7. During the last 2 minutes of grilling, brush the skewers with the remaining sauce mixture to create a glaze. Watch carefully to prevent the sauce from burning.
  8. Remove the grilled chicken skewers from the heat. Serve immediately with the reserved Bang Bang sauce for dipping.

Notes

  • For extra flavor, you can marinate the chicken in a small amount of the sauce for 30 minutes before grilling, but avoid marinating too long as the acid in the vinegar can affect texture.
  • If you do not have a grill, you can bake these skewers at 400°F for 15-20 minutes, brushing with sauce halfway through.
  • Serve these chicken on a stick grilled skewers over rice or alongside a fresh salad for a complete meal.
